History of Gingerbread
One of the oldest cookies is gingerbread, baked for over 1,000 years. Thought to have first been made in the Middle East since it benefited from the many spices in the area.
In Europe, Nuremberg is considered the Gingerbread Capital of the World, when in the 17th century, master bakers began shaping it into different animals and hearts.
The Gingerbread house also started in Germany in the early 1800s. Some attribute the custom to Grimm’s Hansel and Gretel. The lebkuckenhaus started appearing in Christmas markets. The Pennsylvanian German descendants brought the practice to the U.S.

Gingerbread Displays at Walt Disney World in Orlando
No surprise that Disney is on the list for best gingerbread houses. The decorations at Disney are inspiring (and I’m not a Disney person).
Its holiday decorations are part of the reason that the week between Christmas and New Year’s is one of the busiest.
The gingerbread house displays move around the resort from year to year. For 2025, the Grand Floridan Resort will not be displaying a house, due to an ongoing renovation.

The National Gingerbread House Competition is held at Omni Grove Park Inn & Spa in Asheville every year. It features elaborate edible creations made of at least 75 % gingerbread, created by competitors in multiple age categories, competing for more than $40,000 in cash and prizes.
This year’s 12 Days of Gingerbread is one of the top things to do in Asheville for the holiday season. After judging, the public can see the displays from Tuesday, November 18, 2025, to Sunday, January 4, 2026.

Gingerbread NYC at the Museum of the City of New York
You can see all the NYC icons in gingerbread! From the city’s ice skating to department store windows and the tree at Rockefeller Center, it has been recreated in the classic holiday treat.
Best of all, NYC bakers did all the rolling and decorating. It is on display at the Museum of the City of New York from November 7, 2025, to January 19, 2026.
Located at 1220 Fifth Ave at 103rd St. Open Monday to Friday from 10 a.m. to 5 p.m., Saturday and Sunday from 10 a.m. to 6 p.m. Adults are $23 and kids 17 and younger are free.
Fairmont San Francisco
Inside the landmark Nob Hill hotel, built in the early 1900s, the Fairmont San Francisco is central to San Francisco. Its lobby is home to seasonal decorations, including its two-story gingerbread house.
Using 8,000 bricks of real gingerbread baked in-house, the life-sized Victorian gingerbread house” in their lobby. It’s 25 feet high, 35 feet wide, and almost 11 feet deep, which includes 1,900 pounds of candy.
Best of all, guests can arrange for a special treat inside the gingerbread house. The Fairmont San Francisco gingerbread house is open from November 22, 2025, until January 1, 2026.

Mohonk Mountain House in New Paltz
Founded in 1869 and a National Historic Landmark, the Mohonk Mountain House is an iconic Catskills destination. This iconic resort is also the host of the 10th annual Hudson Valley Annual Gingerbread Competition.
Inside of the decorated Mountain House, guests will find 20 individual gingerbread houses on display. Hudson Valley Annual Gingerbread Competition viewing dates are December 8 to 12, ad 15 to 19, 2025.

The Broadmoor in Colorado Springs
Opened in 1918 at the base of Cheyenne Mountain, The Broadmoor is a landmark in Colorado Springs and built in the Mediterranean Revival style. It is a historic hotel of America, and offers over 700 rooms plus extensive grounds.
A holiday tradition at The Broadmoor since 1964, its gingerbread display changes theme each year. For 2025, The Spirit of the Games honors the 2026 Olympic Games in Italy. The centerpiece is Santa on a bobsled; however, the fan-favorite is the snowboarder on a ramp.
